The scientists compared the nutritional content of fresh,frozen and canned fruits and vegetables,as well as the effects of cooking and storage.Vitamin C,B and polyphenols were lower in canned foods than in fresh and frozen foods,but nutrients losses in storage and cooking were significantly higher in fresh and frozen fruits than in canned foods.While other nutrients,such as carotenoids,Vitamin E,minerals and dietary fiber,are found in similar amounts in canned foods conmpared to fresh and frozen foods.Other studies have found evern higher levels of certain ingredients,such as carotenoids in pumpkin and lycopene in tomatoes,in canned foods.So in real life the fresh food we eat every day is not necessarily more nutritious than ready-to-eat canned foods.
